Re: What's in your smoker?
Wow Dom… that pastrami looks amazing. I have only done that a couple of times. Might have to put it on the agenda!

Re: What's in your smoker?
Sounds like you are close… so try this…
Cook it uncovered until the internal hits 175. That is usually around 12 hours give or take. Then double foil and put in maybe 1/2 cup of beef broth instead...

Re: Big Green Egg owners
Congrats on the BGE purchase Mark. I have had a large for years and added a medium maybe 6-7 years ago. The medium I pretty much only use to cook steaks. I can get that one to 800 or so easily and...

Re: Happy Birthday SmokinGator!
Thanks for the b'day wishes everyone. I did have a great one. Good dinner, good dessert, a couple glasses of good rum, a very good cigar, and a little lovin'! What more could a man ask for?

Re: What's in your smoker?
Killer looking chuckies Mike. They are a staple on my smoker and I use the meat for all kind of secondary dishes. Congrats on the UDS build as well. I don't use mine too much any more, but there is...

Re: What's in your smoker?
Colin, my ribs improved enormously when I realized they were easy to "over smoke" which created a really dark bark. Go for a clean burn with the thin blue smoke like Peter said. The other tip that...

Re: Official SEC Football Thread 2012
That one was a pop Mike. One of many in that game. Love every second of that 4th quarter. The replay on Breakfast with the Gators didn't have Mick Huber announcing. It was Casey Weldon and Nat Moore....
