I'm a big fan of nigiri and sashimi but if I find a place I like and they high quality sushi chefs I usually just tell them to make whatever they would like and I just tell them when to stop. Usually 5-6 plates worth of custom stuff. But that's just how I roll. Although I must say, my fave sushi place close by, I haven't actually placed an order the last dozen or so times I've been there. They know me so well that when I walk in they just start making things without me having to say a word. I love service like that.
