				 |  Potato pancakes 
			
			1 ½ C. mashed potatoes ½ onion, minced 2 garlic cloves, minced kosher salt and freshly ground white pepper, to taste 3 large eggs 10 saltine crackers, crushed Olive oil Combine potato, onion and garlic, season to taste, mix in eggs and crackers. Heat a non-stick pan over medium-high heat, add oil then spoon batter into pan to make 3” pancakes. Brown on one side, turn and repeat, adding oil as needed. |

			My dad made the best Potato Scones (Scottish)  Nothing but mashed potatoes and flour made into a dough and flattened, fried and smothered in butter, salt and pepper (maybe cheese whiz) Aw crap, getting hungry................. |

			I like to add some shredded leeks or green onions...  Stir in a touch (1/4 tsp) of ground Tumeric; adds nice color to the oil and pancakes.

			The wife's recipe.   You need to grate the potatoes and then squeeze all the water out, add the onions to the potatoes and stir in egg and salt. 1 pound potatoes 1/2 cup finely chopped onion 1 large egg, lightly beaten 1/2 teaspoon salt Fry them in a little olive oil and make more than you think anybody could possibly eat. Yukon Gold potatoes make some really outstanding laktes.   |
