			Turdukin with southern dressing and candied sweet potatos.   Right now I am enjoying Bloody Bulls while the cooking is taking place. Hopefully it willl warm up enough to enjoy an EPC later in the afternoon.  Merry Christmas to All!   |

			Well ... I've decided to do a traditional Puerto Rican holiday dinner. Given that it's the first time that I've done this myself, it's been a three-day process. Four main dishes, plus dessert: 
 Pork shoulder picnic cut  Seasoned  Pasteles  What they look like cooked (this was a test run yesterday)  Bizcocho de ron  The pork is cooking right now (probably 3-4 hours left) and I'll do the rice and bean dishes closer to dinner time. I LOVE this kind of food!!!!! |

			I made a perfect Prime Rib.  Cooked it at 325 degrees until the internal temp reached 115.   |

			We did the traditional turkey this year with all the trimmings, and pumpkin pie with whipped cream for desert.  Along with a couple bottles of fine wine, a good time was had by all, and the best part - leftovers!!
