Yes, there would be redundancy with RAID 1... the two drives would be Mirrored.

I was talking about RAID 5, wouldn't it be possible to initially set up the array as RAID 5 without my third disk, and the downside would be no redundancy. Then i can copy my data over and add the third disk

PS: tigerdirect has 1TB hitachi drives on sale for 80$ after rebate
