Good idea.
The adjustable coal height was great on my (RIP) Smokin' Pro. Have you ever put the steaks directly on the hot coals for like 10 seconds a side and then cook regularly or indirect?

I have seen that done for skirt steak for fajitas, it looked awesome, just make sure you are using hardwood charcoal

Indeed. You can even do it before the charcoal point by putting the steaks on the burning log.

Yup, like 5 seconds a side and then cook indirect. You want searing temp, does not get much hotter than that.
