Anyone use a smoker and if so would you mind sharing temp., time, etc.?

Last time I did jerky, it only took 80 minutes.

Best to check it after an hour.

Didn't see it mentioned anywhere so I thought I'd ask. How do you test for doneness? If it isn't time, is it internal meat temperature?
